Food from your home kitchen

For shelf-stable food made in your home kitchen: the NC Department of Agriculture's step-by-step page lists which foods qualify (nothing that needs a fridge or freezer), the kitchen rules, including no pets in the home and no garages or outbuildings, and the application that leads to an inspection. The page says no permit is issued, only an inspection report, and puts the wait for an inspector at roughly eight to twelve weeks, so read it before you set a launch date.
Do this week
Check your product against the page's low-risk and high-risk food lists and your household against its pet rule, then call your county planning office to ask whether a home food business is allowed at your address.
