Meat and poultry
Video from NC State Extension. Watch on YouTube.
What you'll get
For meat and poultry products: Lisa Benton of the NC Department of Agriculture's Meat and Poultry Inspection Division explains when the state steps in (you sell wholesale, or sell meat from animals slaughtered for sale) and when your county health department does (you sell directly to shoppers), what a state mark of inspection allows compared with a federal one, and who must register as a meat handler. It is the quickest way to learn which agency your product answers to, and she says wholesalers meet the same rules at any volume.
Do this week
Write down who will buy your meat product, whether shoppers, stores or restaurants, and use the webinar to mark whether that sale falls under your county health department, state meat inspection or USDA.
