Food from a commercial or shared kitchen
Video from NC State Extension. Watch on YouTube.
What you'll get
For food made in a commercial or shared kitchen: Minoo Mehrotra, the state's food compliance supervisor, explains how the NC Department of Agriculture inspects commercial food makers, including that each business renting a shared kitchen is inspected on its own and which products need extra steps (shelf-stable sauces, canned and acidified foods, dairy). Watch it before you pick a kitchen, because her order of steps, a call to the compliance office, any required training, then an inspector booked at least two weeks ahead, sets your start date.
Do this week
Write down your product, ingredient list, process steps and the kitchen you plan to use, then call the NCDA&CS food program with that page in hand and keep the list of required steps the officer emails you.
